  It takes almost 30 minutes to prepare lauki ki kofte.  Ingredients required:  Lauki (bottle gourd)- 2 cups   Besan (Chickpea flour)- 2 tsp  Onions- 1 piece  Tomato- 3 piece  Ginger garlic paste- ½ tsp  Salt to taste  Red chili powder- ½ tsp  Coriander powder- ½ tsp  Garam masala- ¼ tsp  Cardamom- 2 pieces  Laung- 2 pieces  Green chillies- 2 pieces  Asafetida- 1 pinch  Oil- 5 tbsp  Method of Preparation:  1. Peel outer layer of lauki and then grate it.  2. Drain out water by pressing grated lauki with hands.  3. Add besan, salt, red chilli powder in grated lauki.  4. Mix everything well with hands to form even batter.  5. Take 4 tbsp oil in a pan and heat it.  6. Drop spoonfuls batter in heated oil.  7. Fry till they become brown in color.  8. Take them out on tissue paper to remove extra oil.  9. Keep them aside.  10. Take a container and add tomatoes, onion, green chilies, cardamom and laung to it.  11. Grind entire contents into a fine paste by adding a cup of water.   12. Now take 1 tbsp oil in a pan and heat it.  13. Add to it 1 pinch asafetida and ginger garlic paste to it.  14.   Ingredients:  For Potato Frying:  • 8 small size potatoes   • ½ cup mustered oil (for frying the potatoes) • ½ tsp of asafetida   For Gravy:  • 2 Medium size onions • 2 Medium size tomatoes • 1 inch chopped ginger • 1 tsp chopped garlic • 2 green chilies • ½ tsp roasted cumin powder • 4 tsps cooking oil • 3-4 cloves • 3-4 green cardamoms • 2 Black Cardamom • 2-3 black paper • 1 inch cinnamon (Dalchini) • 1-2 Bay Leaf • 1/2 tsp Turmeric Powder • 1 tsp coriander powder • 1/2 tsp Chili powder • 1/2 tsp of garam masala powder • ½ tsp fanner powder (sauf powder) • Salt to taste • 2 tsps curd • Coriander leaves for garnishing    How To Make Dum Aloo:  • Remove the peel from potatoes and wash them. • Prick the potatoes all over with a fork. • Take mustered oil in a frying pan and heat it for about one minute. Fry the potatoes on a medium flame until their color changes from white to light brown. • Meanwhile mix ¼ tsp of asafetida in 1 cup of water and pour it over the potatoes.
